MOJO’s Magical Hummus!

1 cup cooked chick peas (1 can, drained and rinsed)
Juice and flesh of ½ lemon (or more to taste)
1-3 cloves garlic pealed and rough chopped
½ tsp salt (less if using canned beans)
1/3 c Tahini (sesame seed “butter”)
¼ c olive oil
Water or reserved cooking liquid to thin if desired

Blend all ingredients together using a food processor or immersion blender. Add additional liquid to thin to desired consistency. Drizzle with olive oil and garnish with parsley. You may also add a cooked sweet potato, roasted peppers, cumin, fresh herbs, or a dash of cayenne (to name a few variations). Have fun!
